<p><span style="font-family: helvetica; font-size: medium;">2-3 freshly cooked crayfish tails or 1-1.2kg prawn tails</span></p>
<p><span style="font-family: helvetica; font-size: medium;">2 large heads romaine or cos lettuce, leaves washed and dried</span></p>
<p><span style="font-family: helvetica; font-size: medium;">3 big handfuls (100g) Oven Baked Croutons or bought bagel crisps</span></p>
<p><span style="font-family: helvetica; font-size: medium;">50g shaved parmesan</span></p>
<p><span style="font-family: helvetica; font-size: medium;"> </span></p>
<p><span style="font-family: helvetica; font-size: medium;">If you’re using crayfish tails, remove the cooked flesh from the shells and cut it into chunks. If you’re using prawn tails, boil them in salted water, then peel and devein them.</span></p>
<p><span style="font-family: helvetica; font-size: medium;">When you’re ready to serve the salad, slice the lettuce leaves into 3-4cm wide slices. Cut or break the croutons or bagel crisps into pieces and place in a large serving bowl with lettuce, parmesan and crayfish or prawns. Add Creamy Seafood Dressing and toss to combine. Serve at once.</span></p>
<p><strong><span style="font-family: helvetica; font-size: medium;">Creamy Seafood Dressing</span></strong></p>
<p><span style="font-family: helvetica; font-size: medium;">Heat 1 tbsp olive oil in a small frypan. Add 2 cloves crushed garlic and 4-5 canned anchovies and cook over a medium heat for 1 minute, mashing the anchovies to a paste. Add 1 cup cream, ½ cup finely grated parmesan and ground black pepper. Boil hard for 2 minutes until bubbles start to get big, which shows the sauce is thickening. Cool before using. This is a great dressing for any kind of seafood. Makes 1 cup.</span></p>
<p><strong><span style="font-family: helvetica; font-size: medium;">Oven Baked Croutons</span></strong></p>
<p><span style="font-family: helvetica; font-size: medium;">Preheat oven to 180°C. Cut a French stick or country bread loaf on an angle into 2cm thick slices. Brush or spray both sides of each slice with a little extra virgin olive oil and spread onto an oven tray in a single layer. Bake for about 15 minutes until golden brown and crisp. Keep an eye on the bread as it can darken and burn quickly. Allow to cool. Croutons will keep for a couple of weeks if stored in an airtight container.</span></p>

Racii (alaturi de alte crustacee si de peste) fac parte din categoria alimentelor “pentru creier”. Acestia contin o multitudine de nutrienti care stimuleaza activitatea cerebrala.</span></p>
<p><span style="font-family: helvetica; font-size: medium;">Specia de raci pe care noi o comercializam, Astacus Leptodactylus, este cunoscuta pentru savoarea gustului dar si pentru combinatia unica de proteine, Omega 3 si amino-acizi – tirozina care energizeaza creierul .</span></p>

<p><span style="font-family: helvetica; font-size: medium;"><strong>Mod de preparare:</strong> Se spala racii in apa rece. Se pune la fiert o oala cu apa, cat sa cuprinda toti racii deodata. Se adauga 1 lingura plina cu sare (este important ca apa sa fie cat mai sarata), usturoi si frunza de dafin. Se fierbe apa la foc puternic. Cand clocoteste, se adauga racii si boabele de piper si se fierb timp de 5 minute. Se lasa sa se raceasca in oala. Se scurg de apa, se curata, dupa care se scoate carapacea si stomacul, lasand racul intreg. Se prepara un aluat subtire de consistenta smantanii, din faina, 1/2 ceasca cu apa si putina sare. Se trece fiecare rac prin acest aluat si se prajeste intr-o tigaie cu ulei fierbinte, la foc mediu, pe ambele parti. Se aseaza pe un platou adanc si se servesc fierbinti.</span></p>

<p><span style="font-family: helvetica; font-size: medium;"><strong>Mod de preparare:</strong> Zarzavaturile se spala si se curata. Morcovii, ceapa si usturoiul se taie in bucati mici si se soteaza în jumatate din cantitatea de unt. Cînd sunt sotate pe jumatate, li se adauga untul si foile de dafin. Racilor vii li se scot intestinele prin coada. Din cantitatea de raci im sfert se introduce în cratita în care au fost sotate zarzavaturile. Peste raci se toarna coniacul si i se da foc. acoperind vasul cu un capac, ca sa arda înfundat, transmitând astfel :miros de alcool legumelor si racilor. Cind flacara s-a stins, se adauga vinul. se acopera din nou si se fierb aproximativ 20 minute. Dupa ce au fiert, racii se scot din vas; la legume se adauga bulionul si esenta de oase, continuînd fierberea înca 10 minute. Rosiile se oparesc, se curata de pielite si seminte, se storc de zeama, se taie în felii subtiri si se soteaza putin cu restul de unt. Acestea se introduc în vasul cu sos împreuna cu piperul si sarea. Racii ramasi se fierb într-o oala separata. Cand fierberea este terminata, se scot cozile tuturor racilor, inclusiv ale celor fierti in sos. Cozile de raci rezul¬tate se introduc in vasul cu sos. Dupa gust se poate adauga si piper alb ca sosul sa fie mai picant. Se serveste ca atare, ca mîncare, sau cu garnitura de orez, imediat dupa ce a fost preparat.</span></p>

<p><span style="font-family: helvetica; font-size: medium;">Mod de preparare: Punem la fiert 1 l apa cu zarzavat, sare (mai multa de cat de obicei) si boabe de piper. Lasam sa fiarba o ora. In acest timp alegem racii vii, ii spalam de mal in mai multe ape, pe fiecare parte, cu mana sau cu o periuta mica. Scoatem aripioara din mijloc a cozii impreuna cu intestinul gros, spalam din nou in cateva ape si punem racii in zeama de zarzavat clocotita. Racii trebuie sa fie acoperiti de un deget de apa. Daca nu ajunge apa de la zarzavat, adaugam apa clocotita dintr-un vas pregatit alaturi. Se fierb 15 minute, pana cand apare o crapatura intre gatul si carapacea racilor. Atunci tragem cratita la coltul masinii si lasam ca racii sa stea acoperiti 10 minute in zeama lor. Curatam usturoiul, punem sare si il pisam intr-o piulita de lemn, pana se face ca o pasta. Scoatem intr-o sosiera si adaugam zeama de raci, astfel incat mujdeiul sa fie ca o smantana subtire.</span></p>

<p><span style="font-family: helvetica; font-size: medium;">Method:</span></p>
<p><span style="font-family: helvetica; font-size: medium;">1. Tip 2 tubs of prawn cocktail into a large bowl, along with the crayfish (or use cooked, mixed seafood).</span></p>
<p><span style="font-family: helvetica; font-size: medium;">2. Add a generous pinch of cayenne pepper, the juice of 1/2 lemon and a handful snipped fresh chives.</span></p>
<p><span style="font-family: helvetica; font-size: medium;">3. Season and gently mix together. Separate the leaves from 4 little gem lettuce hearts and arrange overlapping them slightly. Top with the cocktail mixture and sprinkle with extra cayenne pepper and a few more snipped chives, to garnish.</span></p>
<p><span style="font-family: helvetica; font-size: medium;">4.Serve with rustic bread and 1 lemon, cut into wedges, to squeeze over.</span></p>

<p><span style="font-family: helvetica;"><strong>Mod de preparare:</strong> Se spala fiecare rac in parte sub jet puternic de apa. Se ia o oala mare, se umple cu apa (pe jumatate) si se pune la fiert. Dupa ce apa a dat primul clocot, se adauga racii. Acestia se lasa sa clocoteasca pana devin rosii (de obicei 8-10 minute). Pentru pregatirea sosului: se toaca marunt verdeata. Aceasta se adauga peste usturoiul prajit (nu foarte mult) in ulei de masline, se adauga sarea si piperul. Continutul obtinut se adauga peste raci, si se pune la foc mediu impreuna cu vinul timp de 10 minute. Se servesc cu garnitura de salata de verdeturi.</span></p>
