Crayfish and prawn cocktail salad

Ingredients:

1. 2 x 200g tubs chilled prawn cocktail

2. 350g cooked and peeled crayfish

3. 1 lemon

4. Juice of 1/2 lemon

5. Fresh chives

6. Gem lettuce hearts

7. Cayenne pepper

8. Rustic bread loaf

 

Method:

1. Tip 2 tubs of prawn cocktail into a large bowl, along with the crayfish (or use cooked, mixed seafood).

2. Add a generous pinch of cayenne pepper, the juice of 1/2 lemon and a handful snipped fresh chives.

3. Season and gently mix together. Separate the leaves from 4 little gem lettuce hearts and arrange overlapping them slightly. Top with the cocktail mixture and sprinkle with extra cayenne pepper and a few more snipped chives, to garnish.

4.Serve with rustic bread and 1 lemon, cut into wedges, to squeeze over.
